Conchiglie are the big shells, and the point of them is that they are filled rather than sauced. They are stuffed, set over tomato, covered and baked until the tops take colour, then finished at the pass with a dark herb oil and fennel.
Captain's Deck is the beachside bar at Palm Beach, built to a nautical theme and set directly above the shore, so this arrives with the Bay of Bengal in front of you and very little between. It is a vegetarian dish on a coast that assumes you came for the seafood, which is rather the point of putting it on the list.
