Not cut from a tin. The cheesecake is set in the base of a glass, a caramel layer goes over it, and the whole thing is finished with a quenelle, a freeze-dried crumb and a pistachio tuile. So every spoonful takes all of it rather than working down through a slice.
The smoke is the reason it is on this list. It reads as warmth against the caramel rather than as anything burnt, and it is what turns a familiar dessert into one worth naming.
MBC is the bakery and confectionery counter at Oasis, and also its Mexican and Italian kitchen, which is why the pastry is out from breakfast rather than only after dinner.
